A former luxurious residence was recently remodeled and decorated into modern western style restaurant, creating a brand new culinary experience for food enthusiasts around Semarang, the Capital of Central Java, Indonesia. A 1500-m2 eclectic space for a French-Asian fusion restaurant, a coffee house, and a bar distinguishes Nestcology from the others.

Having had spent his adult life in the culinary world, the chef and owner Ernest Christoga determines to maintain high cooking standard in his kitchen. “When we started, the response was very huge, it’s hard not to mention that at the weekend time, Nestcology regularly had 200 reservations in one shift,” he says.

“We have defined a new category of cooking, a Gastro-Diversity Style of cooking,” he says. Housing 350 seats; 50 for Coffee House, and coming soon, 45 seats of Private Dining, Nestcology aims not only to offer the best culinary experience to guests but also to share the intricate cooking processes behind the kitchen door.

To help with this, Ernest consulted with Nayati to realise an open kitchen concept where guests can see the complete story of a cuisine. He chose Nayati Gourmet Master Kitchen Block as his main arsenal, utilizing all gas module to deliver gourmet foods in a very limited meal-serving time. Whilst Master Kitchen Block holds the flow, the kitchen is not complete without the multi-functional Nayati Combi Steamer- a crucial help for every chef especially during preparation time.
